North vs West – The Hunt for the Best Fluffy Pancakes in Sydney

Gram Pancakes

If you’re looking for a new snack to try or a new go-to dessert somewhere in the Sydney CBD, Gram Pancakes is the place to go! For those on the North Shore, there is also a Gram located continently near Chatswood station. Originating from Japan, these fluffy and decadent pancakes are a must-go attraction to satisfy your sweet tooth cravings. However, if pancakes aren’t too much of your thing – there are other menu options, such as French toast, parfaits, and even some savoury options. On top of that, there are refreshing drinks such as iced teas and lattes with plant milk alternatives to suit everyone.

Interior Design

The interior of both branches is very bright and welcoming, with friendly staff greeting you at the door. What I found rather comforting were the ginormous pancake stack plushies that were seated around the shop near customers and the abundance of foliage surrounding the shop’s interior.

Food and Drink

Of course, we had to order the signature fluffy original pancakes, served with a scoop of cream, smooth butter, and thick syrup. There are also other variations of the pancakes, such as tiramisu, matcha, or even chocolate. These pancakes tasted just like how they looked- melting in your mouth, with a rich and satisfying flavour every bite. We also ordered the generic French toast with fried bananas and a velvety side of cream.

The milky drinks were vibrant, although a little heavy, and did leave us satisfied with a full stomach and making plans on when to next come back. The iced teas would be something I come back to take on the go, with its perfectly balanced flavours and refreshing taste- perfect for a hotter day. They also have to-go pancakes, which are cut in half and the cream spread throughout the middle. These are perfect for picnic snacks, or if you are just running low on time but would still like a sweet bite.

AIR LAB Souffle

Quite literally moving to another side of Sydney, Air Lab in Cabramatta also offers souffle pancakes. This place had been constantly appearing on my TikTok and so I decided to see what the hype was about, and it did not disappoint!

Air lab only does takeaway, with workers moving quickly behind the scenes to make your order to-go. A line always tends to build up as the shop opens at midday, becoming super long, especially at night.

Food and Drink

The menu is quite diverse, with items from cake to souffle pancakes, to ice cream, drinks, and cream puffs. However, being a big fan of boba, I decided to get the Boba souffle pancakes to share and it did not disappoint. They gave us the boba and cream in separate containers to pour over the pancakes, which were super soft and quite literally melted in my mouth. The presentation of these desserts is quite Instagram and TikTok-worthy, and I finally understood the hype.

Overall

As for the best pancakes? I don’t think I’d be able to choose just one, as both these dessert shops serve such different variations of similar dessert items which makes it feel like I am comparing apples and oranges.

However, these are two options for next time when it feels as though you may need a pick-me-up sweet treat!
